Ingredients: 4 sneetjes brood. 150g champignons, in plakjes gesneden. 100g geraspte kaas. 2 eetlepels boter. Zout en peper naar smaak.

Instructions: Verhit een koekenpan op middelhoog vuur. Smelt 1 eetlepel boter in de pan. Voeg de champignonplakjes toe en bak ze tot ze zacht zijn, ongeveer 5 minuten. Breng op smaak met zout en peper. Leg twee sneetjes brood op een snijplank. Verdeel de gebakken champignons gelijkmatig over de sneetjes brood. Strooi de geraspte kaas over de champignons. Bedek elk broodsneetje met een ander sneetje brood om de tosti’s te maken. Smeer de buitenkant van de tosti’s in met de resterende boter. Plaats de tosti’s in een panini pers of een grillpan en bak ze tot ze goudbruin zijn en de kaas gesmolten is, ongeveer 4-5 minuten per kant. Serveer de tosti’s warm en geniet ervan!

Put the mix into molds or a baking dish with paper edges. Put it in the fridge for at least an hour so it can set. Take them out of the molds or cut them up.

Let the shells for the cookie tarts cool all the way down. Put lemon curd in each tart shell. Add some whipped cream on top. Add lemon zest as a garnish. Put it in the fridge for 30 minutes before you serve it.
